Scallops with Rice Noodles, Ginger Garlic & Chilli

This is a brilliant starter for when you are entering over the weekend. Why? Because its ready in under 15 minutes, it’s a bit of a showstopper, but actually very easy to make (no-one need know that) and they taste absolutely amazing! Who’s going to give these a go?

INGREDIENTS

Recipe for 6 scallops

3 scallops (in the half shell) per person as a starter

50g rice noodles

Sesame oil to drizzle the noodles

Coriander to serve

⠀⠀⠀⠀⠀⠀⠀⠀⠀

Dressing

2 tablespoons sesame oil

1 tablespoon soy sauce

Juice of 1-2 limes (taste to check)

1 clove garlic - crushed

1 teaspoon grated ginger

1 red chilli - finely chopped

⠀⠀⠀⠀⠀⠀⠀⠀⠀

METHOD

Pre - heat the oven to 220 degrees.

Mix the dressing ingredients in a jar and set aside.

Plunge the noodles into boiling water for 4-5 minutes then drain. Drizzle in sesame oil so they don’t stick together.

⠀⠀⠀⠀⠀⠀⠀⠀⠀

Add a small amount of noodles to each scallops shell and drizzle with 1 teaspoon of the dressing on each scallop.

Roast for 8-10 minutes and remove from the oven. Drizzle with more of the dressing and sprinkle with coriander.
