These poke bowls are totally addictive, really healthy and so easy to make. They originate from Hawaii, but are becoming more popular over here in the U.K. Use the freshest tuna you can get make sure you get rid of any gristle when chopping. The marinade works as a dressing, which will liven up so many dishes. ⠀ ⠀ I sourced my Tuna from Sankey’s Fishmongers in Tonbridge.⠀ ⠀ 2 Yellowfin Tuna Steaks⠀ 150g mango chopped ⠀ Rice noodles cooked according to pack instructions ⠀ 3/4 of a cucumber sliced into moons⠀ 1 red chilli sliced ⠀ 1 baby gem lettuce separated⠀ 10 radishes sliced ⠀ Sesame seeds⠀ ⠀ Marinade / dressing ⠀⠀ 2 tbsps sesame oil⠀⠀ 2 tbsps rice wine vinegar ⠀⠀ 1 1/2 tbsps kikkoman soy sauce ⠀ Juice of a lime⠀⠀ 2 teaspoons of honey ⠀⠀ 1 clove crushed garlic ⠀ 1 teaspoon grated ginger⠀ ⠀ ⠀ Mix the marinade ingredients in a bowl. ⠀ ⠀ Chop the tuna into 1cm squares. Pour 3/4 of the dressing over the tuna. Assemble the salad, tuna and noodles in a bowl. Drizzle with the rest of the marinade/dressing.
