Indian food and yogurt is a match made in heaven, which is why Tims Dairy and I thought it would be fantastic to run our Curry Nights Campaign to encourage people to cook healthy and delicious Indian inspired food at home.
This is my whole roasted tandoori chicken which is so simple, healthy and easy to make. A fantastic way to feed a crowd over the weekend. I’ve included the recipe a lovely green sauce that took 5 minutes to blitz and really transformed the chicken into something special.

Tandoori Chicken

INGREDIENTS
1 whole Medium Chicken ⠀

Marinade ⠀
2 tablespoons Tims Dairy Greek Yogurt ⠀
3 cloves crushed garlic ⠀
1 thumb sized piece of ginger grated ⠀
1 teaspoon ground cinnamon⠀
1 teaspoon ground cumin⠀
1 teaspoon ground coriander⠀
1 teaspoon paprika⠀
Juice of 1/2 lemon ⠀
1 chilli finely chopped (optional)⠀
⠀
Optional sauce⠀
1 small pack fresh coriander ⠀
Juice half lemon ⠀
1 tablespoon Tims Dairy Greek Yogurt ⠀
1 clove Garlic ⠀
1 teaspoon grated ginger ⠀
1 teaspoon cumin ⠀
1 teaspoon ground coriander ⠀
METHOD

Mix the marinade ingredients together. Smother the chicken in the marinade and season generously. Leave for 20 minutes (if you can) or anything up to 8 hours. Roast at 210 degrees for 1 1/2 hours. Leave to rest for 20 minutes.⠀

Blitz the ingredients together in a bullet or blender. ⠀
