Whole Harissa Roasted Cauliflower with Yogurt & Pomegranate seeds



If you haven’t tried roasting cauliflower, then you absolutely must. Cauliflower takes on spicy flavour well and when roasted it has a lovely nuttiness about it. My cauliflower was from @blasytir who produce delicious welsh vegetables and what’s fantastic about their company is that it 100% owned my the farmers!



INGREDIENTS


1 head of cauliflower @blasytir

2 tablespoons rose Harissa paste

1 tablespoon natural yogurt

1 clove crushed garlic

Squeeze of lemon

1 tablespoon pomegranate seeds

Olive oil

Salt & Pepper

Foil



METHOD



Pre-heat the oven to 210 degrees.

Trim the cauliflower so that it can sit flat. Mix the Harissa paste, yogurt, garlic and lemon juice together and coat the cauliflower with the mixture. Season generously and drizzle with olive oil. Cover with foil and roast for 55 minutes. Remove the foil and roast for another 30 minutes.

Serve with a spoon full of natural yogurt and a sprinkling of pomegranate seeds
