Tuna Poke Bowl


I know that it hasn’t been that long since I posted a Poke Bowl, but how can I resist when such a healthy meal tastes so good. My children both adore them and it’s a great way to incorporate delicious raw vegetables to their diet. This fantastic black rice is from @belazu and goes so well with these fusion of flavours. I found these beautiful watermelon radishes @ocado from @natoora You can use any vegetables you like. A few suggestions would be mini corn, peppers, Pak Choi, sugar snaps or asparagus. Whatever works for you.


Serves 2

⠀⠀⠀⠀⠀⠀⠀⠀⠀

INGREDIENTS ⠀⠀⠀⠀

⠀⠀⠀⠀⠀

2 Yellowfin Tuna Steaks⠀

150g mango chopped ⠀

Black rice cooked according to packet instructions

3/4 peeled into ribbons

1 red chilli sliced ⠀

1 baby gem lettuce separated⠀

10 radishes sliced ⠀

1 avocado sliced

Sesame seeds⠀

Marinade / dressing ⠀⠀

2 tbsps sesame oil⠀⠀

2 tbsps rice wine vinegar ⠀⠀

1 1/2 tbsps kikkoman soy sauce ⠀

Juice of a lime⠀⠀

2 teaspoons of honey ⠀⠀

1 clove crushed garlic ⠀

1 teaspoon grated ginger⠀

METHOD ⠀



Mix the marinade ingredients in a bowl. ⠀

Chop the tuna into 1cm squares. Pour 3/4 of the dressing over the tuna. Assemble the salad, tuna and noodles in a bowl. Drizzle with the rest of the marinade/dressing. ⠀⠀⠀⠀⠀⠀⠀
