It doesn’t get more British than Toad in the Hole. Delicious Yorkshire pudding taking on the flavour of the sweet onion and savoury sausage couldn’t get much more comforting than this. You can leave out the onion if you like, but I think it’s definitely worth adding.
Serves 4
INGREDIENTS
Batter 125g plain flour 1 teaspoon salt 2 large eggs 300ml milk 1 red onion cut into 8 wedges 2 tablespoons oil 6 to 8 sausages
METHOD
Whizz the batter ingredients in a blender or bullet and leave for at least 30 minutes to rest if you can.
Put the sausages and onion in a roasting pan drizzle with a little oil season and roast for 15 minutes at 210 degrees. Remove from the oven and place on the hob. Add a little more oil to the pan, then add the batter. Return to the oven and cook for another 20-25 minutes.
Serve with gravy and peas.
