Thai Green Chicken Skewers

Quick healthy and easy, but oh so tasty! I cooked these in a really hot oven, but with BBQ season around the corner (I hope!) these tasty kebabs would be brilliant cooked outside. I served these with sticky rice and a cucumber ribbon salad which was delicious.

Serves 4

INGREDIENTS

⠀⠀⠀⠀⠀⠀⠀⠀⠀

4 chicken breasts - cut into cubes

8 Wooden skewers

⠀⠀⠀⠀⠀⠀⠀⠀⠀

Paste/marinade

⠀⠀⠀⠀⠀⠀⠀⠀⠀

2 cloves garlic

1 blade lemongrass tough outer leaves removed and chopped

2 teaspoons chopped ginger

2 kaffir lime leaves

1 tablespoon fish sauce

Juice of 1 lime

1 teaspoon palm sugar or honey

2 green Thai chillies

2 tablespoons chopped coriander

2-3 tablespoons coconut milk

METHOD

⠀⠀⠀⠀⠀⠀⠀⠀⠀

Preheat the oven to 220 degrees.

⠀⠀⠀⠀⠀⠀⠀⠀⠀

Blitz the paste ingredients together until smooth. Loosen with more coconut milk if too thick. Marinate the chicken in the sauce for 30 minutes or overnight. Thread the chicken into the skewers. Drizzle with a little oil and season. Cook in the oven for 15-20 minutes.

Serve with jasmine rice and green beans.
