Texan Pulled Pork, Sweet Potato Fries & Corn on the Cob

This is a fantastic stress free way of feeding a crowd. We enjoyed this last weekend with sweet potato wedges and corn on the cob. I happened to have some soft tortillas, which my boys filled sloppy Joe style. It was messy but lots of fun! Definitely one for the whole family. Let me know what you think?

INGREDIENTS

⠀⠀⠀⠀⠀⠀⠀⠀⠀

1.5-2kg Pork shoulder - boneless and rindless

2 red onions - chopped

3 cloves garlic - finely chopped

200ml stock

⠀⠀⠀⠀⠀⠀⠀⠀⠀

Marinade

2 tablespoons ketchup

2 tablespoons Worcester sauce

2 tablespoons soy sauce

2 tablespoons honey

1 teaspoon ground cumin

1 teaspoon chilli powder (optional)

1 tablespoon smoked paprika

Preheat the oven to 200 degrees.

METHOD

⠀⠀⠀⠀⠀⠀⠀⠀⠀

Mix the marinade together and coat the pork. Place in a large casserole pot on top of the onions and garlic. Season add the stock and put the lid on. Place in the oven and immediately turn the heat down to 140. Leave for 5 hours. Remove from the oven take the lid off and back in for another 45 minutes. Remove once more and pull apart with two forks.
