Tenderstem® Broccoli & Prawns Pil Pil



 

[AD] Summer appears to have returned and I’m clinging on to distant summer holiday memories. Here are my Pil Pil Prawns with lovely Tenderstem® broccoli. This 15 minute healthy meal takes us on another culinary journey to Spain. As I have said before Tenderstem® broccoli really is such a versatile vegetable. It can be used in curries, soups, pastas, ramen and used in so many dishes from across the globe. Make sure you mop up the juices with crusty bread. Delicious!

Serves 2⠀

⠀⠀⠀⠀⠀⠀⠀⠀⠀

INGREDIENTS

4 cloves garlic finely sliced ⠀

1 red chilli sliced⠀⠀

1 dried chill - left whole (optional)

12 large raw prawns

2 teaspoons smoked paprika ⠀

200g Tenderstem® broccoli  - blanched for 2 minutes

Salt & pepper⠀

Juice of half lemon⠀

METHOD ⠀

Add a good amount of olive oil (roughly 3 tablespoons) to a frying pan on a medium/hot heat. Add the garlic and chilli, as they begin to sizzle add the raw prawns, followed by the paprika and season. Stir to combine the ingredients and coat the prawns. When the prawns are pink, add your Tenderstem® broccoli, warm through and add the juice of 1/2 lemon. Take off the heat stir and serve. Pour onto a plate, including the delicious juices, which must be mopped up with crusty bread!⠀
