Here is a healthy chicken Traybake loaded with summer vegetables and nutritious chickpeas. This crowd pleaser was thrown together in less than 5 minutes and left to work its magic in the oven. What are you cooking today?

INGREDIENTS
Marinade
2 cloves garlic
Juice 1/2 lemon
2 teaspoons smoked paprika
Dash of olive oil to loosen ⠀⠀⠀⠀⠀⠀⠀⠀⠀
8 Chicken Thighs
2 red peppers - roughly chopped
3-4 courgettes - chopped into chunks
1 red onion - cut into 8 wedges
1 can of chickpeas - rinsed and drained
1 corn on the cobs - each cut into 2
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD
Preheat the oven to 200 degrees.
Mix the marinade ingredients in a bowl and add the chicken. Leave for 30 minutes. Add everything except the corn and the chickpeas to a large roasting dish. Drizzle with oil and season generously. Cook in the oven for 30 minutes. Remove from the oven and stir in the chickpeas. Add the corn, and roll in the delicious juices. Place back in the oven for another 10-15 minutes.
