Sticky Satay Pork Chops

Pork chops are really cheap to buy but they do need jazzing up otherwise they can be dry and boring. This marinade is perfect for chops as it’s thick and sticks well to the meat, helping to keep the pork beautifully juicy.

Serves 2

INGREDIENTS

⠀⠀⠀⠀⠀⠀⠀⠀⠀

2 pork chops

1 tablespoon sesame seeds

Optional lime and chilli to serve

⠀⠀⠀⠀⠀⠀⠀⠀⠀

Marinade

1/2 tablespoons peanut butter

1 tablespoon soy sauce

1 tablespoon sesame oil

2 teaspoons honey

1 clove garlic - crushed

1 teaspoon grated ginger

⠀⠀⠀⠀⠀⠀⠀⠀⠀

METHOD

Preheat the oven to 220 degrees.

Mix the marinade together in a bowl and coat the pork chops thoroughly. Leave for 30 minutes if you can. Season and drizzle with a little oil and into the oven for 15-20 minutes.

Serve with rice and steamed spinach squeezed with lime juice and sprinkled with chilli.
