With Half term break around the corner I thought I share this delicious chicken recipe which will go down a storm with your children. You could use thighs or chicken breasts but drumsticks are budget friendly and children enjoy using their hands and getting stuck in and sticky! Delicious hot or cold so make extra for the fridge.
Serves 4
INGREDIENTS
1kg Chicken drumsticks
350g Butternut squash - peeled and cubed
1 orange - sliced
Coriander to serve (optional)
Marinade
2 cloves garlic - crushed
1 teaspoon cornflour
Juice of 1 orange
2 tablespoons soy sauce
1 tablespoon maple syrup or 1 teaspoon honey
METHOD
Preheat the oven to 210 degrees.
Mix the marinade in a large bowl and coat the chicken thoroughly. Leave for 30 minutes if possible. Add the chicken (including the marinade) squash and orange slices to a large roasting dish. Season generously.
Roast for 30-45 minutes turning once during the cooking time. (For breasts roast the squash for 20 minutes before adding the chicken, then roast for a further 25 minutes.)
