Without question this is one of my boy’s favourite meals. They like it served with white fluffy rice and corn on the cob smothered in melted butter. This homemade bbq sauce can be made in minute with simple store cupboard ingredients, and it works well on all chicken cuts, as well as ribs a pork belly.

Serves 4
INGREDIENTS
Marinade
⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 cloves garlic - crushed
4 tablespoons ketchup
2 tablespoons soy sauce
1 tablespoon Worcester sauce
1 tablespoon honey
Salt & Pepper
⠀⠀⠀⠀⠀⠀⠀⠀⠀
8 chicken thighs
Tin foil
⠀⠀⠀⠀⠀⠀⠀⠀⠀
To serve,
Lime wedges
Spring onion - chopped
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat the oven to 210 degrees.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Mix the marinade ingredients together in a bowl and coat the chicken thoroughly. Leave for 30 minutes if you can. Add to a large roasting tin. Season and cover with foil. Cook in the oven for 25 minutes. Remove the foil and cook for a further 20-25 minutes. Serve with lime wedges and spring onion.
