For those of you that missed my LIVE on Thursday night, here is a quick and simple recipe which is perfect for this sunshine we are having the pleasure of at the moment. British tomatoes are superb right now and will add a beautiful freshness to this lovely recipe. Feel free to add prawns with their shells on for a rich and amazing sauce.

Serves 4
INGREDIENTS
* 300-400g raw Prawns
* 300g fresh tomatoes chopped ⠀⠀
* 1-2 red chillies finely chopped
* 6 cloves garlic crushed ⠀⠀
* 1 bunch parsley finely chopped
* 4-500g dried spaghetti or linguini
* For cooking:
* Olive oil⠀⠀
* Salt & Pepper to taste
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Boil a pan of water for the pasta.
Sizzle the garlic in olive oil for a few minutes, making sure you don’t burn it. Finely chop the chilli and add that to the garlic. Cook the pasta in salted water. Add the tomatoes and season generously. Simmer for about 4-5 minutes until the tomatoes start to turn into a sauce. Finely chop some parsley. Throw in the prawns and cook until pink - roughly 3-4 minutes. Drain the pasta, reserving a little cooking water. Toss the pasta with the parsley and sauce. Check for seasoning.
Tip -
Cook the pasta 1-2 minutes less than packet instructions. The pasta will continue to cook when you mix it with the sauce.

I made this for dinner last week when it was a beutiful night and we were able to eat outside , so quick easy and delicious , and we had a nice chilled glass of rose to compliment it
