Soy & Peanut Chicken Kebabs


Here is a marvellous marinade that is so versatile. Delicious on whole chicken pieces, or chicken fillets, it’s a marinade that I’ve been making for years with little tweaks here and there. Sometimes instead of spring onion I finely chop a shallot or 1/2 onion. Sometimes I use ginger, sometimes I don’t. Make the recipe work for you, but please do give it a try. I’ve given the recipe for a conventional oven, but these kebabs are an absolute winner on the BBQ, just remember pork fillet needs very little cooking and it’s perfectly fine to serve it just cooked through, or even a little blushing.

Serves 4


INGREDIENTS l⠀⠀⠀⠀⠀⠀⠀⠀⠀


Marinade


2 tablespoons peanut butter

1 tablespoon maple syrup or honey

3 tablespoons soy sauce ⠀

2 cloves crushed garlic ⠀

2 spring onions - finely chopped

1 teaspoon grated ginger

1 red chilli - finely chopped (optional)

1 tablespoon sesame oil


12 chicken thigh fillets

METHOD


Pre-heat the oven to 180 degrees c fan, 200 degrees c conventional.


Mix the marinade ingredients together in a large bowl. Add the chicken and coat thoroughly. Leave for 30 minutes or anything up to 24 hours. Thread on to skewers.


Drizzle with oil and season generously. Roast for 20-25 minutes. Serve with rice, pittas or noodles.
