As you know my recipes are all about simplicity,. This soda bread could not be any easier. Soda bread is a fun activity for kids to make and even better, it will help with one of the many snacks that you are going to have to provide this week! Both of mine are fond of a dipping it into a bowl of balsamic vinegar and olive oil, but it’s also great spread with unsalted butter and a sprinkle of good quality sea salt.

INGREDIENTS
350g whole wheat flour
30g butter
1 1/2 teaspoons salt
1 teaspoon bicarbonate of soda
1-2 teaspoons honey
285 ml buttermilk or milk with a squeeze of lemon and left for 30 minutes

METHOD
Preheat your oven to 180 degrees (conventional) 160 degrees (fan)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Mix the dry ingredients with the butter until evenly distributed. Pour in the buttermilk and honey and stir to combine.Keep stirring until the ingredients come together as a dough, then bring together to form a round loaf shape being carefully not to over work it.
Place the ball of dough on to a nonstick baking tray and cut a deep cross in the centre. This is really important as it helps the bread to cook evenly.
Dust with a little flour and cook for 30 minutes.
