Smashed Cucumber Salad



Here is a gorgeous salad that you are really going to want to try. Loaded with lovely Asian flavours and really simple to pull together.


Serves 2-4 as a side

INGREDIENTS

1 cucumber - halved lengthwise, smashed and sliced

1-2 cloves garlic - crushed

1 -2 teaspoons crispy chilli oil or 1 chopped red chilli and a teaspoon honey

1 tablespoons soy sauce

1 tablespoons rice wine vinegar

1 tablespoons sesame oil

1 teaspoon sesame seeds

1/2 teaspoon salt


METHOD

Combine everything in a bowl and set aside to infuse.
