Skate has a gorgeous texture and takes on flavour well. The wing comes with a flat horizontal skeleton type bone, all in one piece which makes it easy to eat without worrying about tiny bones. I find it works really well roasted in a hot oven as frying it on the hob would require a very large frying pan for more than one piece. This dressing is so simple but transforms the fish into something very special. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Serves 2 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ INGREDIENTS
⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2 skate wings 80g samphire ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Dressing 1 red chilli finely chopped 1 clove garlic crushed Juice 1/2 lemon 1 teaspoon honey 3 teaspoons capers 2 tablespoons olive oil Salt and pepper

Season the skate generously, drizzle with a little oil and roast at 210 degrees for 20 minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Shake the dressing ingredients together in a jar. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Steam the samphire for 2 minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Plate up the dish starting with the fish, followed by the samphire and the dressing. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Serve with new potatoes.
