I have a house full of hungry teenage boys this weekend and instead of them ordering from the local kebab shop 🤢 I’m hoping I can lure them away from a doner kebab with this Shawarma Chicken.
Packed with flavour and a few nutritional goodies for good measure this is a lovely family meal. I have used thighs but if you want to use breasts, then add the chicken 15 minutes after the squash goes in. Have a super weekend!
Serves 4
INGREDIENTS
8 Chicken thighs
2 red onions - each sliced into 8 wedges
3 cloves garlic - crushed
380-400g butternut squash - peeled and sliced
1-2 tablespoons Shawarma paste - I used @belazu_co
Pomegranate seeds
Coriander - to serve

METHOD
Preheat the oven to 210 degrees.
Add the squash onions and garlic to a large pan and mix with a little oil. Coat the chicken in the paste and sit on top of the squash and onions. Drizzle with oil and season generously.
Cook for 35-45 minutes or until the chicken is cooked and tender. Remove from the oven and sprinkle with pomegranate seeds and coriander.
Serve with flatbread or rice
