Sea Bass Fillets with Potatoes, Green Beans & Lemon, Caper & Dill Dressing ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Ready in under 20 minutes this simple and tasty meal is worthy of a dinner party. It is seasonal, delicious and super healthy. During the summer months I could literally eat fish every day, these amazing potatoes from @blas_y_tir are a perfect accompaniment and absorb the fantastic dressing beautifully.

Serves 2

INGREDIENTS

Dressing

1 clove garlic - crushed

1 small shallot - finely chopped

2 teaspoons finely chopped dill

Juice 1/2 lemon

3 teaspoons capers

2 tablespoons olive oil

Salt & pepper

⠀⠀⠀⠀⠀⠀⠀⠀⠀

2 sea bass fillets

400g Pembrokeshire Early Potatoes

150g green beans

⠀⠀⠀⠀⠀⠀⠀⠀⠀

METHOD

Bring a pan of water to the boil.

⠀⠀⠀⠀⠀⠀⠀⠀⠀

Meanwhile add the dressing ingredients to a jar and shake.

⠀⠀⠀⠀⠀⠀⠀⠀⠀

Boil the potatoes for 10-15 minutes or until just cooked through. Throw in the beans and steam for 2 minutes. Drain and pour over 1/2 the dressing and toss. Set aside.

⠀⠀⠀⠀⠀⠀⠀⠀⠀

Sauté the seasoned fish in a super hot pan using a little oil. Two minutes skin side down and 1 minute on the other side.

Plate up the dish starting with the potatoes and beans, top with the fish and drizzle with the dressing.
