A fantastic midweek budget meal that covers every food group and is cooked in one pan. Whenever I make this meal I wonder why I don’t cook it more often. Choose the best quality lean sausages you can for fantastic results.

⠀⠀⠀⠀⠀⠀⠀⠀⠀
INGREDIENTS ⠀
8-10 Sausages - I used @jollyhog
2 red peppers cut into chunks ⠀
2 red onions sliced into wedges ⠀
10 small new potatoes ⠀
1-2 tablespoons Balsamic Vinegar ⠀
Basil leaves to finish (optional)⠀
A large roasting tin ⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Start by drizzling the potatoes with olive oil and seasoning them with salt and pepper. Place in an oven of 210 degrees for 30 mins. ⠀

Remove from the oven and add the peppers onions, sausages and drizzle with balsamic. Give it a good toss and then return to the oven for 25-30 minutes. Remove from the oven and sprinkle with torn basil leaves.⠀
