My boys have grown up enjoying a bowl of this at least twice a month their whole lives. It’s economical to make and totally delicious to eat. My Tips - Use the best quality sausages you can afford and spend a little time sautéing the onions until soft and golden for a rich and delicious sauce. The red wine adds another depth of flavour but only if you have a bottle open. I’ve made this plenty of times without and it’s still lovely.

Serves 4 (approximately £1.25 a portion)⠀⠀

INGREDIENTS
⠀⠀⠀⠀⠀⠀⠀⠀⠀
3-4 onions finely chopped ⠀⠀
5 cloves of crushed garlic ⠀⠀
Pack of good quality lean sausages ⠀⠀
100 ml red wine
2 tins of chopped tomatoes or passata ⠀⠀
Tablespoon of tomato purée ⠀⠀
Parmesan cheese grated⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD

Caramelise the onion in olive oil on a low heat with salt and pepper, then add garlic. With scissors, chop the sausages into the pan. Stir the sausages into the onion mixture to get a little colour, being careful not to burn the onion. Pour in the wine and reduce on a high heat. Now add the tins of tomatoes stir and simmer on a low heat with the lid on for about an hour. Add the tomato purée 10 mins before the end of cooking time with the lid removed.⠀⠀

Cook the pasta according to pack instructions. Toss with the sauce and serve. Add grated Parmesan if you wish. Delicious!⠀⠀
