Over the Easter hols we all need a few family crowd pleasers up our sleeves. This Orzo based dish is budget friendly, cooked in one pan and delicious. As you know I have all of my recipes on my website which is updated on a daily basis. INGREDIENTS
250g Orzo
375 chipolata sausages
1 red onion sliced into 8 wedges
3 cloves of garlic - finely chopped
300g butternut squash - peeled and cut into small cubes
500 ml stock
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD
Preheat the oven to 210 degrees.
Add the sausages, garlic, onion and squash to a roasting tin. Drizzle with olive oil and season.
Roast for 20 minutes. Remove from the oven and stir in the dry Orzo so it’s evenly dispersed. Add the stock and stir again. Return to the oven and cook for another 20 minutes.
