A fantastic midweek budget meal that covers every food group and is cooked in one pan. Whenever I make this meal I wonder why I don’t cook it more often. Choose the best quality lean sausages you can for fantastic results. If you can’t be bothered to make the potatoes into Hasselbacks, then simply halve each one. Enjoy!

Serves 4 ⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
INGREDIENTS ⠀
8-10 Sausages -
2 red peppers cut into chunks ⠀
2 red onions sliced into wedges ⠀
10 small new potatoes
1-2 tablespoons Balsamic Vinegar ⠀
Basil leaves to finish (optional)⠀
A large roasting tin ⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Start by slicing the potatoes roughly 1-2 mm apart, not going all the way through, drizzle the potatoes with olive oil and seasoning them with salt and pepper. Place in an oven of 210 degrees for 30 mins. ⠀

Remove from the oven and add the peppers onions, sausages and drizzle with balsamic. Give it a good toss and then return to the oven for 25-30 minutes. Remove from the oven and sprinkle with torn basil leaves.⠀
