Everyone loves a cheap and tasty midweek meal, especially when it involves very little washing up. This hearty and delicious casserole can easily be transformed into a vegetarian meal, by substituting the sausages for extra lentils and peppers.⠀ ⠀ ⠀ Serves 4⠀
INGREDIENTS ⠀ 12 chipolata sausages or 8 regular ⠀ Tin tomatoes ⠀ 140 g cooked beluga lentils⠀ 3 onions chopped ⠀ 3 cloves of garlic crushed ⠀ 1 red pepper chopped ⠀ Basil⠀ Salt/pepper/olive oil⠀ Teaspoon smoked paprika ⠀
METHOD⠀ Sauté the onions until golden for a rich flavour. Add the garlic, red pepper and smoked paprika. Brown the sausages and add to the pan. Pour in the tin of tomatoes, season and simmer for 45 mins on a low heat. Now add the cooked lentils and simmer for a further 20 mins. ⠀ Scatter with your herb of choice.⠀
