Eating healthily really does not have to be boring. This family Traybake is a superb example of that. Packed full of omega 3 and loaded with fibre filled veggies. This recipe works brilliantly with any white firm fish - hake, cod, haddock or pollock would all work perfectly. If aubergine isn’t your thing, then butternut squash or sweet potato’s would be a fantastic replacement.

INGREDIENTS
2 small red onions - each chopped into 8 wedges
2 aubergines - chopped into chunks
2 red peppers - chopped into chunks
2 cloves garlic - crushed
2-3 tablespoons olive oil
1 tablespoon balsamic vinegar
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Salmon marinade
Juice 1/2 lemon
2 teaspoons olive oil
1 small clove crushed garlic
⠀⠀⠀⠀⠀⠀⠀⠀⠀
4 salmon fillets
Optional finely chopped herbs or spinach to finish
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD
Preheat the oven to 210 degrees.
Add all of the ingredients except the salmon and marinade to a large roasting dish. Mix to combine and season generously. Roast in the oven for 35-45 minutes giving it a mix halfway through if you remember. Add the salmon on top of the veg and drizzle with the marinade. Season and back into the oven for 10 minutes. Serve with steamed rice.
