Salmon, Leek & Asparagus Filo Pie

This lovely spring pie is so easy to make and really enjoyable to eat. Made using British Asparagus and the sweet leeks from @blas_y_tir it makes the perfect balanced family meal which is all cooked in one pan! Enjoy 😊

INGREDIENTS

7-8 sheets of filo pastry - each cut in half

500g fresh Salmon - cut into 4cm chunks

2 leeks - sliced

5 asparagus spears - cut into 3

1 onion - finely chopped

200ml creme fraiche

Juice 1/2 lemon

1 tablespoon chopped dill

Olive oil or spray oil

Large frying pan that can go into the oven

⠀⠀⠀⠀⠀⠀⠀⠀⠀

METHOD

Preheat the oven to 200 degrees

Start by sautéing the onion until soft. Add the leeks to the pan and cook on a low heat until soft. Now add the asparagus and the creme fraiche. Warm through, squeeze in the lemon juice and sprinkle with dill. Stir thoroughly. Carefully add the salmon pieces making sure they are evenly distributed. Gently simmer for 3-4 minutes then remove from the heat. The salmon won’t be completely cooked at this stage. While hot, scrunch each half of filo pastry and top the salmon mixture. Continue until the pie is covered. Spray or brush the pastry lightly with olive oil. Place in the oven for 10 minutes.
