Here is a lovely Traybake made using salmon fillets. This would also be gorgeous if made with trout, hake, cod or haddock. You can use any potatoes you like. I prefer waxy new potatoes but as long as they are chopped small enough then the cooking times would work with any type.
Serves 4
INGREDIENTS
500g new potatoes - sliced
1 red onion - sliced into 8 wedges
100g cooking chorizo - sliced
12 cherry tomatoes
Basil to serve
Marinade
2 cloves garlic - crushed
Juice 1 lemon
3-4 tablespoons olive oil
1 teaspoon smoked paprika
Salt & pepper
METHOD
Preheat the oven to 210 degrees.
Mix the marinade ingredients together in a bowl.
Add the potatoes, chorizo and onions to a large pan. Add half the marinade and drizzle with a little oil. Season and toss.
Cook in the oven for 35 minutes. Meanwhile coat the salmon in the rest of the marinade. Remove from the oven and top with the salmon and the tomatoes. Season and cook for 10 minutes.
Sprinkle with basil and serve with a green leafy salad.
