This is one of my favourite things that I have made recently, it’s an absolutely gorgeous combination of delicious flavours and textures. Not Charlie’s thing at all, so I happily enjoyed his portion for lunch the following day. Beetroot is amazing right now so make sure you add a bunch to your weekly shop.

INGREDIENTS
4 raw beetroot - peeled and quartered
500g new potatoes
1 red onion - cut into 8 wedges
4 salmon fillets
Orange slices
Basil to serve

Marinade
Zest of 1 orange
Juice of 1 orange
1 clove garlic - crushed
2 teaspoons honey
Salt and pepper

METHOD
Preheat the oven to 190 degrees.
Add the beetroot to a large roasting pan and drizzle with olive oil, season and roast for 15 minutes. Throw in the potatoes and onion and add a bit more oil if too dry. Season and cook for another 35 minutes. Now add the salmon fillets, and orange slices and pour over the marinade. Season the fillets and roast for another 10-12 minutes. Sprinkle whole basil leaves generously and serve.
