Roasted Pepper & Black Bean Salad

This salad is not only delicious, simple to make, but has such excellent health benefits. This is another one that I deliberately make too much of so that I have leftovers for the following day.⠀ Black beans are such a healthy and versatile food that we can all benefit from. They are dense sources of protein and fibre, they contain a wide variety of antioxidants, and they have significant amounts of a large number of vitamins and minerals.⠀ Studies have shown that black beans are effective in fighting inflammation, disease, obesity, cancers, and nutritional deficiencies. Perhaps we should think about eating more black beans? ⠀ Serves 2⠀

INGREDIENTS⠀

1 can of black beans rinsed and drained⠀ 3 colourful peppers chopped into chunks ⠀ 2 red onions each cut into 6-8 wedges or 4 banana shallots s quartered ⠀ Basil leaves ⠀ Olive oil⠀

METHOD

Place the peppers and onions into a roasting tray. Drizzle with olive oil, Belazu’s balsamic vinegar and season. Roast in an oven of 210 degrees for 25 minutes. ⠀ Add the beans to the vegetables in the pan ( this way they are coated and will absorb the delicious flavours) gently stir, then transfer to a serving bowl. Finish with basil.⠀
