AD | At this time of year, life can get rather hectic and I’m all for simplifying things wherever possible, but that doesn’t mean that you have to compromise on quality or flavour when it comes to eating. A rib roast of beef has to be one of my absolute favourites, and I think my entire family would agree. The impressive roast of grass-fed British beef is 35 day dry-aged, and it’s hand prepared by their craft butchers so you can just snip the strings off and lift it off the bone for easy carving too. We enjoyed an early family Christmas gathering and I made a port and shallot gravy, caramelised shallots and homemade horseradish sauce to go with it. All amazingly delicious. INGREDIENTS
2.5-3kg bone in Donald Russell Carvery Rib Roast
6-8 banana shallots peeled
6 cloves garlic - whole
Salt pepper ⠀
METHOD
Pre heat the oven to 230 degrees.⠀
Season the meat well and place in a roasting tin with the shallots. Drizzle with a little oil and place the beef in the hot oven for 20 mins, then turn the oven down to 200 and roast the meat for another 65 mins (for rare) or another 75 mins (for medium-well done) Leave to rest for 30 minutes. ⠀
Serve with vegetables of your choice and a delicious homemade onion gravy.
