Rich Tomato Pasta

Growing up in the 80’s while all my friends were reaching into the freezer for a “Findus Crispy pancake” 😣 🤣 I was lucky enough to be eating good home cooked food. My mum was a single mum working full time in London and although our budget was tight, we both ate extremely well. This tomato pasta featured at least once a week on our menu. Sometimes as a side to a piece of chicken or pork escalope, or simply on its own with some strong cheddar or Parmesan melted in at the last minute. Consequently my boys have grown up eating this simple but absolutely delicious pasta sauce pretty much every week of their lives.

Top Tip :- For a really rich and flavoursome sauce, cook the onions low and slow for about 1/2 hour until sticky and sweet before adding the garlic.

INGREDIENTS

3 red onions - finely chopped

5-6 cloves garlic - crushed

2 tins of tomatoes or passata

Basil & Parmesan to finish

⠀⠀⠀⠀⠀⠀⠀⠀⠀

⠀⠀⠀⠀⠀⠀⠀⠀⠀

METHOD

Sauté the onion until golden. Add the garlic, stir then add the tomatoes and 3/4 of a tin of water. Simmer on a low heat for 30 minutes. Check for seasoning. Cook the pasta according to packet instructions, drain and toss with the sauce.
