This is so simple that it doesn’t really count as cooking. Ready in 15 minutes, beautifully healthy and can be made with whatever you have to hand. As long as you have a decent miso paste, leftover salmon, tofu or chicken. some green veg, such as sugar snaps, green beans or frozen edamame. The results will be nutritious and delicious. Enjoy!
Serves 2⠀⠀⠀⠀⠀⠀⠀⠀⠀
INGREDIENTS
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 heaped tablespoon of miso paste
700ml boiling water
150g raw prawns
2 bulbs pak choi
1 chilli - sliced
125g dried noodles
Lime to serve
Optional sesame seeds
METHOD
Dissolve the miso paste in boiling water in a saucepan. Bring to a simmer. Add the noodles and pak choi and simmer for 4 minutes. Now add the prawns and chilli and cook for 2 minutes. Serve with a squeeze of fresh lime.
