Frittatas are a great way of using up ingredients in your fridge. More often than not we all have eggs, vegetables and some sort of cheese kicking around. This time I used the beautiful leeks and new potatoes from @blasytir and some lovely prawns I had in my freezer. 15 minutes later I had a delicious and healthy meal with enough for four people to enjoy! ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Serves 4

INGREDIENTS
8 eggs
2 leeks - sliced
3 new potatoes - cooked and sliced
12 raw king prawns
2 tablespoons crumbled goats cheese
Optional herbs
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD
Preheat the oven to 200 degrees.
Whisk the eggs, season and set aside.
Pan fry the leeks in olive oil until soft. Add the prawns and potatoes. Pour in the eggs and stir as if you were making an omelette. Dot in the cheese and into the oven for 15 minutes.
