Prawn & Chickpea Korma

On Christmas Eve I like to have something with a little bit of spice, but at the same time suitable for the family. This year has been really tricky and many of us need to watch what we spend over Christmas. Here is an amazing family friendly Prawn Korma which is super easy to prepare and won’t cost the earth, in fact it comes in at under £3 per person and doesn’t compromise on taste one bit.

Serves 4

INGREDIENTS

2 onions - finely chopped £0.30

5 cloves garlic - crushed £0.25

2 teaspoons grated ginger £0.20

1 chilli - finely chopped £0.25

600ml single cream £1.00

1 tablespoon ground almonds £0.35

2 teaspoons honey £0.10

1 tablespoon sultanas £0.10

400g Frozen king prawns - defrosted £8.00

1 can chickpeas - drained £0.60

Flaked almonds to serve (optional)



Spices - £0.80

5 cardamom pods⠀⠀

1 teaspoon medium curry powder

1 teaspoon ground cumin⠀⠀

1 teaspoon ground coriander⠀⠀

½ teaspoon ground turmeric⠀⠀⠀⠀

1 tablespoon ground almonds

1 tablespoon sultanas to serve⠀⠀⠀

METHOD


Sauté the onions until soft. Add the garlic, ginger and chilli and cook for a few minutes. Add the spices and the chickpeas and stir. Pour in the cream and bring to a very gentle simmer for 7-10 minutes so that the flavours infuse. Add the prawns and cook for 5 minutes.
