INGREDIENTS
8 Chicken thighs
4 red chillies - optional
Marinade
3-4 cloves garlic - crushed
Juice 1/2 lemon or 1 lime
2 teaspoons sweet smoked paprika
1 teaspoon honey
1 teaspoon dried oregano
1/2-1 teaspoon dried chilli flakes
2 tablespoons olive oil
Salt & pepper
METHOD
Pre heat the oven to 200 degrees (conventional) 180 degrees (fan)
Mix the marinade ingredients in a bowl. Slash through the skin and into the flesh with a sharp knife and coat the chicken thoroughly in the marinade. Add to a large roasting tray along with the whole chillies and cook for 30-45 minutes.
