Now that spring has sprung it’s time for one of my seasonal cocktails. The perfect Mother’s Day aperitif which will get Mothering Sunday off to a good start. It’s made using the new grapefruit & thyme gin from @pipehousegin which has just been launched this week. Pipehouse is bottled locally to me in Tunbridge Wells and in my opinion is gorgeously delicious. Let me know what you think?

INGREDIENTS
⠀⠀⠀⠀⠀⠀⠀⠀⠀
25 ml Pipehouse pink grapefruit and thyme gin
Prosecco or Champagne
Juice of 1 pink grapefruit
1 teaspoon agave syrup or to taste
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Chill the gin and the fizz.
Squeeze the grapefruit and chill until needed (You want it really cold) mix the agave syrup with the grapefruit juice. Pour the gin between the 2 glasses, now add the grapefruit juice. Top with the fizz and serve with a sprig of thyme.
