Peaches have been amazing this year and I’m using them in as much as I can while they last. Obviously you can make a purée and then top it with fizz to make a delicious Bellini, but I wanted to try something different. ⠀
As with so many of my cocktail recipes, the virgin version makes a tasty and nutritious drink for the kids or the resident driver in your crowd.⠀

Serves 2⠀

4 peaches or nectarines ⠀
2 tablespoons sugar syrup (or to taste)⠀
2 shots rum⠀
1 sprig rosemary ⠀
4-5 ice cubes⠀
⠀
If you are using peaches, then score the skin and plunge them in boiling water. Remove the skin and stone and place in the blender of bullet. With nectarines you can leave the skin on. Add 6 rosemary leaves, the sugar syrup, ice and the rum to the blender and blitz until smooth.⠀
