Hello January 2019! Over the next few weeks rather than thinking about weight loss or dieting, I’m going to try and inject as much nutritional goodness into my recipes as possible. It’s probably a good time to ditch any desserts (we can do that can’t we?) and cut back on the alcohol a bit (I don’t do dry January’s!) but well done you if that’s your plan. I plan to eat well feeling thoroughly satisfied. Who fancies joining me?
First up is this delicious pea soup. A lovely light lunch packed full of lovely protein.

INGREDIENTS
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 medium potato, peeled and diced into 1-2cm pieces
1 tbsp olive oil
2 onions chopped
5 cloves garlic crushed
900ml stock (I saved the juices from cooking my ham)
350g frozen peas
85g leftover ham

⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD
Sauté the onions until soft, add the diced potatoes and garlic and cook for 10 minutes. Add the stock and simmer for 15 minutes until the potatoes are soft. Add the peas and cook for 2 minutes. Blend until smooth. Now add the ham and warm through.
