Now that we are back to home-schooling our little (and not so little) darlings, I thought it would be useful to share a few easy, yet nutritious, lunches. Frittatas are a fantastic way of using things up in your fridge and they are delicious hot or cold. Perfect with a salad, steamed greens or even used as a filling for a sandwich in a hearty roll.
Great ingredients for frittata’s -
Spinach
Edamame
Tomatoes
Kale
Chard
Potatoes
Squash
Onions / spring onions
Leeks
Mushrooms
Chorizo
Bacon
Cheeses
Tuna
Salmon
Prawns
Leftover chicken
Herbs
Serves 3-4
INGREDIENTS
8 eggs
80g ham
1/2 mug of frozen peas
150g goats cheese, feta, or cheddar
METHOD
Preheat the oven to 200 degrees.
Whisk eggs and season generously. Add a little oil to a frying pan (10-12 inches that can transfer to the oven) Pour in the egg and stir like you would an omelette. Add the ham and peas a stir a little more. Top with the cheese and transfer to the oven for 10-15 minutes or until set. Allow to cool slightly before eating.
