⠀ I wasn’t sure if these were worthy of a post, but after publishing them on my story so many people have asked me for the recipe. They aren’t my prettiest dish, but wow do they taste good! I made them as an experiment and ended up eating the whole tray all to myself 🙄⠀ They are definitely a healthier version of regular chips or fries, a great way of getting one of your five a day and a good source of protein thanks to the Parmesan. For true vegetarians, be sure to use pecorino as a replacement. I have a feeling they will go down well with children, but I can’t confirm that until I make another batch 😂⠀ ⠀ ⠀ ⠀ ⠀ INGREDIENTS⠀ 2 large courgettes cut into 7cm length 1cm thick rectangles ⠀ 4 tablespoons grated Parmesan ⠀ Olive oil ⠀ Salt and pepper ⠀
METHOD
⠀ Place the courgettes on a large roasting tray. Drizzle with olive oil and sprinkle with the Parmesan. Season and roast in a hot oven of 230 degrees for approximately 20 minutes. Sprinkle with plenty of salt and serve.⠀ ⠀ ⠀
