We love pancake day in our house. Both boys are huge fans of just about any kind. Toby (nearly 17 will probably kill me later) was quite annoyed when he moved to his Senior school and they didn’t serve pancakes at lunch time?! Being Toby, he took matters in to his own hands and went to the village shop and bought milk, eggs, flour, Nutella, sugar and lemons. He borrowed the common rooms kitchen and sold them for 50p each 🙈
So what ever happens I always make pancakes after school on shrove Tuesday.

INGREDIENTS
3 large eggs
125g plain flour ⠀
250 ml milk ⠀
unsalted butter

METHOD
Whizz the milk, plain flour and eggs together in a bullet or blender. Leave to stand for at least 10 minutes if you can, but I find leaving it over night produces a lovely consistency.
Heat a tiny knob of butter in a good nonstick pan. When melted and golden, add a small ladle full of pancake batter. Tilt the pan in a circular motion so that the mixture is dispersed around the pan. After a couple of minutes flip the pancake and cook the other side.
