In our house we enjoy a delicious pasta recipe at least once a week. I regularly make a sausage pasta, but this time I fancied giving it a little kick! Being a huge fan of southern Italian flavours and particularly loving the rustic cuisine of Calabria, I thought I’d add a touch of this tasty Nduja Pesto from @sacla_uk
No need to chop any chillies with this action packed pesto, it certainly has a kick, but also a lovely fruitiness. This one will certainly be featuring regularly in my house in the future.

Serves 4-6⠀⠀⠀⠀⠀⠀⠀⠀⠀
INGREDIENTS ⠀⠀⠀⠀⠀⠀⠀⠀⠀
4 onions finely chopped ⠀⠀
4 cloves of crushed garlic ⠀⠀
800g good quality lean sausages or sausage meat
2-3 teaspoons of Sacla’ Nduja Pesto
2 tins of chopped tomatoes or passata
Tablespoon of tomato purée ⠀⠀
Parmesan cheese grated⠀⠀
400g dried pasta
⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD ⠀⠀
Caramelise the onion in olive oil on a low heat with salt and pepper, then add garlic. Squeeze the sausages from their skin into the pan. With the back of a wooden spoon break the sausages up and combine with the onion. Cook for 10 minutes to get a little colour, being careful not to burn the onion. Stir in the Nduja Pesto. Now add the tins of tomatoes stir and simmer on a low heat with the lid on for about an hour. Add the tomato purée 10 mins before the end of cooking time with the lid removed.⠀⠀

Cook the pasta in salted water according to pack instructions. Toss with the sauce and serve. Add grated Parmesan and fresh basil.
