Here is a lovely twist on the classic dressed salmon which would be a most welcome addition to any Boxing Day buffet or perfect as a Christmas Day starter. This could easily be made a day in advance and kept in a fridge overnight. It literally took 25 minutes (not including cooling time) to pull together and I hope you agree is a bit of a show stopper. Does anyone fancy trying this one out?
Serves 6
INGREDIENTS
1/2 side of Salmon (skin on)
1 cucumber - thinly sliced
Sesame seeds to serve
Marinade
3 teaspoons miso paste
2 tablespoons soy sauce
2 teaspoons honey
Juice 1/2 lime
Dressing (cucumber)
1 tablespoon mirin
1 tablespoons sesame oil
Juice 1/2 lime
METHOD
Preheat the oven to 200 degrees.
Mix the marinade ingredients together in and coat the salmon. Season (not much salt) and cook in the oven for 13-16 minutes. Leave to cool on the roasting tray.
Coat the cucumber in the dressing and dress the salmon so that it looks like scales starting from the tail end and working forward. Sprinkle with sesame seeds to finish.
