We all love a lasagne in our house. It’s something that can be made in advance and finished in the oven when needed. I thought I’d have a go at a meatball lasagne for a nice change and I’m so glad I did. I made my own meatballs, but you could cheat and buy good quality ready made. Make sure that the meatballs are evenly spaced in the layers so that each serving has an equal amount. Enjoy 😊
Serves 6

INGREDIENTS
9-12 lasagne sheets
1 ball mozzarella - torn and blotted on kitchen towel
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Béchamel Sauce⠀
60g butter⠀
60g plain flour⠀
600ml milk⠀
Salt and pepper
Melt the butter in a saucepan over medium-low heat.⠀
Stir in the flour. Whisk in a little of the milk at a time, stirring continuously until you have a smooth, slightly thick sauce.⠀
Remove from the heat; seaon with salt and pepper. Add bay leaf for additional flavour.⠀

Meatballs:⠀⠀⠀
800g lean minced beef⠀⠀⠀
2 small onions grated or finely chopped ⠀
4 cloves crushed garlic ⠀⠀
60g grated Parmesan ⠀⠀⠀
2 small beaten eggs ⠀⠀
Salt/pepper ⠀⠀⠀
Combine the meatball ingredients and shape into approximately 12-16 balls. Chill until needed. Gentle fry until golden.

Tomato Sauce
2 tins of tomatoes⠀⠀⠀
4 small onions finely chopped ⠀⠀⠀
5 cloves garlic ⠀⠀⠀⠀
Sauté the onion until soft and transparent. Add the garlic, stir then add the tomatoes. Simmer on a low heat for 30 minutes. Loosen with a little water if it gets too thick. Season generously.⠀

Layer the lasagne starting with :-

Lasagne
Meatballs
Tomato sauce
Lasagne
Cheese sauce
Parmesan
Mozzarella
And repeat, saving a few meatballs for the top.

Place in an oven of 200 degrees for 30-35 minutes. Serve with a lovely green salad.
