Pork Tenderloin is the leanest cut of pork, which makes it the healthiest choice. It’s reasonably priced and takes on flavour brilliantly. This meal requires 5 minutes prep and can be cooked in 15-20 minutes⠀ ⠀ ⠀ Serves 4-6
INGREDIENTS⠀ 600g (1lb 3oz) pork fillet, cut into 4cm chunks⠀ 2 red peppers, deseeded and cut into chunks⠀ 1 tsp chopped fresh coriander ⠀ Sesame seeds ⠀ ⠀ For the marinade⠀ 3 tbsp soy sauce⠀ 1 tbsp honey⠀ 1 large garlic clove crushed⠀ 1 tbsp sesame oil⠀ 5cm piece ginger grated⠀ 1 red chilli finely chopped ⠀ ⠀ METHOD
Mix the marinade ingredients together in a bowl and add the pork to the marinade. Leave for 30 minutes or anything up to 8 hours.⠀ Thread the meat on the skewers alternating with the red pepper. Drizzle with a little oil and season.⠀ Roast in an oven of 220 degrees for 15-20 minutes. This also works really well on a BBQ.⠀ ⠀ I served this with noodles and a Pak Choi, shiitake mushroom, ginger, garlic and chilli stir fry.
