We often associate Indian takeaways with being unhealthy and bad for us. This couldn’t be further from the truth with my Spiced Cod & mango salsa. Cod takes on flavour beautifully and the Tims Dairy yogurt marinade ensures that the fish stay wonderfully moist. The best thing about this meal is that it can be ready in just 30 minutes!

INGREDIENTS
2 cod loin fillets ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Marinade 2 tablespoons Tims Dairy Natural Yogurt 1 clove garlic crushed 1 red chilli finely chopped 1 teaspoon grated ginger 1 teaspoon ground cumin 1 teaspoon ground coriander 1 teaspoon medium curry powder Juice 1/2 lime 1 teaspoon honey ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Salsa 1 mango peeled and finely chopped 1 red chilli finely chopped 1 teaspoon coriander finely chopped 1/2 red onion finely chopped Juice 1/2 lime Salt & Pepper
METHOD
⠀⠀⠀⠀⠀⠀⠀⠀⠀ Mix the marinade together and coat the fish. Leave for 20 minutes if possible. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Mix the salsa ingredients together in a bowl. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Roast the cod for 11 minutes at 220 degrees. Remove from the oven and serve with the #mango salsa. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Serve with Indian bread. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
