Here is a lovely recipe that I’m really excited to share with you. Loaded with goodies, full of Middle Eastern flavour and ready in 30 minutes. What’s not to love?
INGREDIENTS
2 onions - roughly chopped
3 cloves garlic - crushed
1 teaspoon grated ginger
300g butternut squash - peeled and chopped
250g Orzo
400ml stock
4 salmon fillets
4 teaspoons harissa - I used @belazu_co apricot harissa
8-10 olives
Coriander, pomegranate seeds & lemon to serve

METHOD
Preheat the oven to 210 degrees.
Add the butternut squash, onion, garlic & ginger to a large roasting pan. Drizzle with oil and season. Roast for 15 minutes. Remove from the oven and stir in the Orzo, coating it in all the delicious flavour. Pour in the stock, stir and return to the oven for another 10 minutes. Coat each salmon fillet in harissa and season. Remove the Orzo from the oven and top with the salmon. Return to the oven for 10 minutes. Sprinkle with coriander, pomegranate seeds and lemon.
