AD | How about trying this showstopper for all of those lovely Dad’s over the weekend. This marinade was mixed together in minutes and loaded on to my amazing Everdure HUB by Heston Blumenthal BBQ (available to purchase from @kettlerGB ) in no time at all. It’s such a fun and totally delicious way to cook a leg of lamb and this marinade worked so well. So I’ve tried a rotisserie chicken on this fantastic bit of kit and now this leg of lamb. What do you think I should try next?

Serves approximately 6-8
INGREDIENTS
Marinade
1 tablespoon of harissa
2 teaspoons olive oil
Juice 1/2 lemon
1-2 cloves garlic - crushed
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 leg of lamb
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD
Mix the marinade ingredients together in a bowl.
Slash the lamb in a lattice pattern, approximately 2.5cm apart. Rub the lamb in the marinade and season generously.
Prepare the BBQ according to instructions. Secure the lamb on the rotisserie rod and cook the lamb on the lower setting (as in height) on the rotisserie for 1 hour for pink/rare.
If you are cooking this straight on the grill then it’s best to remove the bone and butterfly the lamb before coating it in the marinade.
Leave to rest for 20-30 minutes before carving.
Serve with flatbreads, hummus and a lovely platter of salad ingredients drizzled in, lemon, garlic, herbs, olive oil and seasoning.
