A 10 minute budget meal all cooked in one pan! ⠀
I learnt after my cooking day in London last week with @asda that gnocchi can be pan fried instead of boiled. Why did I not know this before? I thought I must share with you at once, so that you too can save on washing up! I actually thing that the gnocchi is improved by this cooking method as it doesn’t absorb water, just delicious flavour instead. ⠀
INGREDIENTS

2 cloves garlic ⠀
1 tablespoon pine nuts⠀
1 bunch of basil⠀
1 tablespoon grated Parmesan (or pecorino for a veggie option)⠀
Olive oil⠀
Squeeze of lemon juice ⠀
⠀
Shop bought fresh gnocchi ⠀
METHOD
⠀ Add all of the ingredients except the cheese to a mini chopper. Blitz until combined. Stir in The grated Parmesan and loosen with olive oil if necessary. Season and set aside. ⠀ ⠀ Warm a large pan on a medium heat, drizzle in olive oil. Now add the gnocchi and warm through tossing occasionally. If it colours slightly then fantastic - it adds texture and flavour. After approximately 4-5 minutes pour in the pesto. Warm through and coat the gnocchi. ⠀
